Ingredients
For the dough:
Flour – 520 g
Milk – 250 ml
Sugar – 1 tbsp
Dry yeast – 2 teaspoon
Vegetable oil – 100 ml
Egg – 1 pc.
Yolk – 1 pc.
Wheat starch – 60 g
Salt – 1/2 teaspoon
For filling:
Poppy – 100 g
Sugar – 3-5 tbsp
Butter – 60 g
For lubrication:
Yolk – 1 pc.
Milk – 1 tbsp
Directions
We prepare products for the dough. The flour should be sifted and the milk warm.
We make a quick dough: we send dry yeast, sugar and 1 tablespoon. To warm milk. a spoonful of flour. Stir and let the dough stand for 5 minutes.
Mix the remaining flour with starch and salt.
We break the eggs, leave one yolk to grease the cake before baking. Add the matched brew, two whites and yolk, vegetable oil to the flour.
Knead soft and elastic dough. Knead the dough on the table for 7-8 minutes. Then we round the dough, put it in a cup and cover with a film. Let the dough stand in a warm place and double in size, in time – about an hour.
The dough fits perfectly, it’s a pleasure to work with.
And now we need to prepare the stuffing products. The butter should be soft, so we take it out of the refrigerator beforehand. Grind poppy seeds with sugar in a blender.
Knead the dough and roll it into a large rectangular layer (about 30×50 cm).
Lubricate the prepared layer with soft butter and evenly distribute the sugar-poppy filling.
We wrap the dough with poppy filling in a tight roll.
We cut the roll into washers about 2 cm thick.I got 24 cake blanks.
Cover the bottom of the mold (26 cm in diameter) with parchment. We lay out the blanks in a circle in a prepared form. For the middle, we leave 6 “washers”.
Let the dough “distance” under the film for 10-15 minutes. At this time, preheat the oven to 180 degrees.
Before baking, grease the poppy seed cake with yolk mixed with milk.
We bake a cake from yeast dough at a temperature of 180 degrees for 40 minutes.
A beautiful and flavorful tear-off poppy seed cake is ready! For those with a sweet tooth, I suggest boiling sugar syrup and, while the cake is hot, lightly grease the crust.
