  • 1 piece (s) zucchini, approx. 7cm
  • 2 tomato (s)
  • 2 tablespoon tomato paste
  • water
  • salt and pepper
  • thyme
  • rosemary

Instructions

  1. Cut the bell pepper, onion, zucchini (approx. 7cm piece), and tomatoes into roughly equal-sized pieces.
  2. Place all vegetables in a saucepan and add enough water to just cover them.
  3. Add the tomato paste, thyme, rosemary, bay leaf, and season with salt and pepper to taste.
  4. Bring to a boil over medium-high heat, then reduce to medium heat and simmer for about 4-5 minutes until the vegetables are tender.
