Blueberry Jam Muffins (Lean)

A sweet treat – flavored blueberry jam muffins – can be made in Lent.

Ingredients

  • Blueberry jam (or other liquid) – 0.25 cups
  • Sugar – 0.25 cups (to taste)
  • Vegetable oil – 0.25 cups + for greasing forms
  • Flour – 1 glass
  • Water – 0.25 cups
  • Soda – 0.5 teaspoon
  • Vinegar – 0.5-1 teaspoon

Directions

  1. Mix jam, sugar, water and butter. Beat (with a blender).
  2. Add flour, stir.
  3. Quench the soda with vinegar, add to the dough and mix everything thoroughly again.
  4. Turn on the oven. Grease muffin molds with butter, line out the dough so that the molds are two-thirds full. Bake lean muffins with blueberry jam for 20-25 minutes at 180 degrees.
  5. Cool the finished blueberry jam muffins and sprinkle with icing sugar.
