Breakfast Rolls (Airy Yeast Dough with Kefir)

I offer easy-to-prepare airy yeast dough on kefir for pies and buns.

Ingredients

  • Wheat flour – 450 g
  • Kefir – 200 g
  • Warm water (30-35 ° С) – 50 ml
  • Small egg – 1 pc.
  • Vegetable oil – 50 ml + for working with dough
  • Fresh yeast – 15 g
  • or dry yeast – 6 g
  • Sugar – 25 g
  • Salt – 4 g

For greasing and sprinkling buns:

  • Yolk – 1 pc.
  • Sour cream – 1 teaspoon.
  • Sesame – to taste

Directions

  1. Dissolve yeast in warm water. Add room temperature kefir, sugar and 2 tablespoons of flour. Leave it on for 15-20 minutes.
  2. Separate a couple tablespoons of flour and mix the rest with salt. Add yeast mash, egg and vegetable oil to it. Stir all food.
  3. Pour half of the set flour on the table, i.e. 1 tbsp. Place the dough on top. Knead to a smooth, homogeneous dough so that it does not stick to your hands. Add the remaining flour as needed, but do not necessarily strive to stir it in.
  4. Hand kneading the yeast dough on kefir takes 7-10 minutes.
  5. Grease a bowl with vegetable oil, send the dough there and also grease with vegetable oil on all sides. Place in a warm place to double in volume. Approach time – from 40 minutes to 1 hour 20 minutes.
  6. Wrap and leave on the table for another 20 minutes.
  7. Stretch the dough into a rope and divide into the desired number of pieces.
  8. Shape into buns and leave them to separate for half an hour. Brush with yolk and sprinkle with sesame seeds.
  9. Bake buns from yeast dough on kefir for 25 minutes at a temperature of 180-190 ° C.

Breakfast rolls are ready.
