Fill a medium-sized saucepan with water and bring to a boil. Season with salt. Blanch the broccoli in boiling water for about two minutes, then drain and chop.
Put the broccoli, spring onions, garlic, cheddar, egg and breadcrumbs in a mixing bowl. Add chilli sauce or another hot sauce of your choice. Mix well and place in the refrigerator for 15 to 20 minutes.

Shape the mixture into small bites and distribute evenly on baking paper. Bake for 8 to 9 minutes. Turn and bake on the other side for another 8 to 9 minutes, until golden brown.
