Casserole “Lazy Stuffed Cabbage” with Champignons

Tasty, satisfying, and without unnecessary problems! Casserole “lazy cabbage rolls” with champignons will surely be appreciated by all homemade ones. This is both a hearty lunch and a delicious dinner.

Servings: 4

Ingredients

  • White cabbage – 400 g
  • Minced beef – 350 g
  • Champignons – 250 g
  • Canned tomatoes in their own juice – 200 g
  • Bulgarian pepper – 1 pc.
  • Onions (medium) – 2 pcs.
  • Hard cheese – 150 g
  • Butter – 30 g
  • Tomato paste – 1 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – 4 tbsp
  • Water – 150 ml

Directions

  1. Peel one onion, cut into quarters, and layer. Peel the bell peppers and cut them into strips.
  2. Heat half (2 tablespoons) vegetable oil in a frying pan, add chopped onions and bell peppers. Fry over medium heat for 4-5 minutes.
  3. Chop the cabbage into thin strips. Add to the skillet with onions and peppers, salt, and stir. Pour in 150 ml of water, cover, and simmer for about 20 minutes over low heat.
  4. Peel and cut the second onion into small cubes. Heat the remaining vegetable oil in another skillet. Add the chopped onion and sauté for 2-3 minutes.
  5. Add ground beef to the onion. Stir and grill over high heat for 6-7 minutes, stirring with a spatula for an even browning.
  6. Cut the tomatoes in their own juice (if you are using whole, not chopped) cut into small pieces, and add to the fried minced meat. Season with salt and pepper to taste. Stir. Simmer for 4-5 minutes over low heat.
  7. Open the lid of the skillet and add the tomato paste, butter, salt, and black pepper. Increase the heat and cook for about 5 minutes, until all the liquid has evaporated.
  8. Rinse the champignons well. Cut into thin slices with the legs. If desired, the mushrooms can be fried in butter with spices and at the end add a chopped clove of garlic. Turn the oven 180 degrees to preheat. Prepare a deep ovenproof baking dish. Place half of the cabbage on the bottom of the mold and smooth with a spatula.
  9. Place the ground beef on top of the cabbage and spread evenly with a spatula. Add the chopped champignons, spreading evenly over the entire surface of the minced meat.
  10. Spread the other half of the cabbage evenly over the mushrooms. Grate hard cheese on a coarse grater and spread on top in the last layer. Send the casserole dish to the oven, preheated to 180 degrees, for 35-40 minutes.
  11. The casserole “lazy cabbage rolls” with mushrooms is ready. Serve hot.
