Casserole with Chicken Breasts and Brussels Sprouts

In this recipe, tender chicken is the deliberately “coarse” juniper berry commonly used in lamb or beef. The meat remains tender, but the chicken spirit and flavor evaporate.
Ingredients
- Chicken breast – 1 pc. (2 fillets)
- Juniper berries – 1 teaspoon
- Salt
- Ground black pepper
- Brussels sprouts (you can take frozen) – 400 g
- Butter – 100 g
- Garlic – 2 cloves
- Chicken broth – 150 ml
- Grated nutmeg – pinch
- Vegetable oil – 2 tbsp
- Hard cheese – 150 g
- Peeled sunflower seeds – 3 tbsp
Directions
- Crush juniper berries in a mortar. Add salt and pepper to them. Grate chicken breasts with this mixture, cover, and leave to marinate for 15-20 minutes.
- Peel and cut the cabbage into halves. Peel the onion, chop finely and brown in hot butter. Add garlic passed through a press, cabbage. Fry, stirring occasionally, for 5 minutes. Pour the broth over, cover, and simmer over medium heat for 15 minutes. Season with salt, pepper, season with nutmeg.
- Fry the chicken fillet in heated vegetable oil on each side until lightly browned. Put the cabbage in a baking dish. Put the fried chicken fillet on the cabbage.
- Cut the cheese into thin slices and place on top. Sprinkle with seeds. Bake for 20 minutes under a lid in an oven preheated to 180 degrees. Then remove the lid and bake for another 10-15 minutes.
- Serve in the same dish that was baked. You can boil pasta for a side dish.
