Chakhokhbili from Mutton

Georgian cuisine is very colorful and delicious. Our family has great respect and love for Georgian cuisine. We offer you a recipe for a very tasty lamb dish – chakhokhbili.

Ingredients

  • Fatty lamb – 1 kg
  • Potatoes – 600 g
  • Onions – 600 g
  • Tomatoes – 600 g
  • Greens (cilantro, parsley, basil, savory) – 30 g
  • Salt – 1.5-2 teaspoon
  • Garlic – 2 cloves
  • Bitter pepper – 1 pc.

Directions

How to cook lamb chakhokhbili:

  1. Wash one kilogram of fatty lamb pulp, dry, and cut into small pieces.
  2. Peel 600 grams of onion, wash, cut into half rings.
  3. We peel 600 grams of potatoes, wash and cut into large slices.
  4. One kilogram of my tomatoes, cut crosswise, pour boiling water and leave for a few minutes.
  5. After a few minutes, rinse with cold water, easily peel the skin, remove the stalk and cut into small cubes.
  6. Put the prepared meat in a preheated deep frying pan with a thick bottom and fry for 15-20 minutes, stirring from time to time.
  7. After 20 minutes, put the chopped onion, fry, stirring from time to time for 5-6 minutes. During frying, add 1.5-2 teaspoons of salt.
  8. Add prepared tomatoes, mix.
  9. Add the chopped potatoes, mix again, cover, and simmer over moderate heat for about 20 minutes.
  10. Chop two cloves of garlic and one hot pepper. Finely chop 30 grams of cilantro, parsley, basil, or to taste.
  11. After 20 minutes, turn off the heat, add chopped herbs, prepared hot peppers and garlic to the pan, cover with a lid and leave for 2-3 minutes.
  12. After 2-3 minutes, transfer the lamb chakhokhbili to a dish and serve.
