Charlotte Classic

The classic apple charlotte is a simple apple pie that you can get right the first time, even if you are just a novice cook.

Servings: 8

Cook: 40 minutes

Ingredients

  • Apples (medium size) – 3-4 pcs.
  • Eggs – 5 pcs.
  • Sugar – 1 glass
  • Wheat flour – 1 cup (150 g)
  • Salt – 1 pinch
  • Ground cinnamon (optional) – 4 pinches
  • Butter (for greasing the mold) – 30 g
  • Powdered sugar (to decorate charlotte) – to taste

Directions

  1. Cut the apples into quarters, cut the seeds out of them, then cut the apples into slices.
  2. Carefully separate the egg whites from the yolks. Try to do this so that not a drop of yolk gets into the whites, otherwise they will not beat up. Also, make sure that the dishes with proteins are dry.
  3. Pour a pinch of salt into a container with egg whites and beat them with a mixer into a strong foam, for 5-6 minutes.
  4. Add sugar and beat the whites and sugar again for 1 minute.
  5. Add the egg yolks to the whipped whites and beat for 1 minute.
  6. Pour the sifted wheat flour into the egg mass and stir in at low speed of the mixer for about 2 minutes (or stir in the flour by hand using a spatula).
  7. A baking dish with a diameter of 20 cm, preferably with removable sides, grease with oil. Pour half of the dough into a mold.
  8. Arrange the apple slices evenly on the dough, sprinkle with ground cinnamon (you can do without it).
  9. Pour the remaining dough over the apples. Place the dish in a preheated oven at 180 degrees. Bake the biscuit dough apple pie for about 25 minutes. Watch the surface of the pie, but do not open the oven while baking charlotte, at least for the first 15-20 minutes.
  10. Allow the finished apple pie to cool in the oven so that it does not settle when you open the door.
  11. Sprinkle the charlotte with apples with powdered sugar, cut into pieces and serve with tea or coffee.
