Ingredients
- 3 cloves garlic
- 125 g mountain cheese, more mature
- 50 g clarified butter
- 1 tablespoon flour
- 500 ml meat stock
- 500 ml milk
- 250 ml beer, light
- salt
- Pepper, from the mill
- cream
- wild garlic or chives

- Preparation:
- Chop the garlic very finely and grate the cheese.
- Preparation:
- Heat clarified butter. Add garlic and sweat with flour.
- Pour the meat stock while stirring. Briefly bring to the boil. Add milk and beer and heat well. Not cook!!!
- Add the cheese while stirring until it has melted.
- Season the soup with salt and pepper. Refine with cream.
- Garnish the finished soup with chopped leek.
