Ingredients
- 500 g potato (s), (floury)
- 100 g feta cheese, aed Mancheo or oat cheese)
- 4 spring onions, finely chopped
- 1 teaspoon, heaped thyme, freshly chopped
- 1 egg (s), whisked
- 1 tablespoon lemon juice
- salt and pepper
- Flour, for dusting
- 4 tablespoon olive oil, (for frying)
- Chives, fresher

- Cook the potatoes in their skins for 25 minutes. Drain and peel off the skin. Put the potatoes in a bowl and mash or mash well.
- Add spring onions, cheese, thyme, egg and lemon juice and season with salt and pepper. Mix everything well, cover and place in the refrigerator for 1 hour.
- Put the flour on a plate. With a teaspoon, shape small portions between the palms of the hands into walnut-sized balls and flatten them lightly with your hand.
- Heat the oil in a pan. Roll the cookies in flour and fry until golden brown on both sides. Drain on kitchen paper. Garnish with chives and serve.
- A perfect accompaniment to light vegetable dishes.
