Ingredients

  • 450 g skyr, e.., with honey flavor
  • 1 packet vanilla pudding powder
  • 3 egg (s)
  • 100 g suar
  • 1 pinch (s) salt
  • 17 ladyfingers
  • raisins
  • Citronat
  • powdered sugar

Instructions

  1. You can also make the cake without a base, i.e. without a sponge finger. Lemon pudding or raisins are a matter of taste. With the yogurt you can take any flavor of Skyr or Greek yogurt.
  2. Separate the eggs. Beat the egg whites with the pinch of salt until they are very stiff. Mix the egg yolks well with the sugar. Add the skyr and pudding to the egg yolk and mix until there are no lumps. Fold in the egg whites. Add raisins, lemon peel or nothing at all, depending on your mood.
  3. Line a size 26 baking pan with ladyfingers. You need a little more than half a pack. Spread the dough on the ladyfingers and bake in a preheated oven at approx. 170 degrees fan for about 30 minutes.
  4. Let cool down well and then enjoy.
