  • Beef – 500 g
  • Internal beef lard – 60 g
  • Eggs – 1 pc.
  • Milk – 50 ml
  • Vegetable oil (or special mixed fat) – 20 g
  • Butter – 20 g
  • Salt – 1 teaspoon (to taste)
  • Ground black pepper – 0.25 teaspoon (to taste)
  • Greens (optional) – 0.25 bunch

  1. Remove tendons from the beef and cut into pieces.
  2. Grind the beef pieces together with the beef lard through a meat grinder.
  3. Add the egg to the minced meat.
  4. Season with 1 teaspoon salt and 0.25 teaspoon ground black pepper. Pour in 50 ml milk.
  5. Mix thoroughly until well combined. If desired, finely chop and stir in the greens. Beat the mixture well to ensure everything is evenly distributed.
  6. Divide the meat mixture into 6 equal portions and form each into a round patty.
  7. Heat 20 g butter and 20 g vegetable oil (or mixed fat) in a large frying pan over medium heat for 2–3 minutes until sizzling.
  8. Place the beef patties in the hot pan.
  9. Fry for 5 minutes on the first side, then flip and fry for 5 minutes on the second side. Reduce the heat to low and continue cooking for 10 minutes more. The meat is done when it reaches 71°C (160°F) internally, or when cut open shows no pink and is gray throughout.
  10. Transfer the patties to a serving plate and serve with your favorite side dish.
