Classic Lobio

Beans in Georgian – “lobio”, the recipe for a traditional Georgian dish of beans with spices and herbs is therefore called that.

Ingredients

  • Beans – 500 g
  • Onions – 2-4 pcs. (250-300 g)
  • Vegetable oil – 1 tbsp
  • Wine vinegar – 1 teaspoon
  • Basil (or tarragon) – 2-3 branches
  • Fresh greens (parsley, cilantro) – 0.5 bunch
  • Ground coriander seeds – 1 teaspoon
  • Hops-suneli – 1 teaspoon
  • For seasoning:
  • Walnuts – 50 g
  • Garlic – 4-5 cloves
  • Ground red pepper – 0.25 teaspoon
  • Wine vinegar – 1 teaspoon

Directions

  1. Prepare products according to lobio recipe.
  2. Pour 1.5 liters of water over the beans. Leave on for 12-14 hours. Then drain the water, rinse the beans 2 times.
  3. Transfer the beans to a thick-walled saucepan or cauldron. Pour water so that it covers the beans completely. Cook over low heat until tender (50-60 minutes).
  4. Classic lobio is cooked so that the water is completely absorbed during cooking. If it remains, you will need to drain it.
  5. While the beans are cooking, prepare the rest of the food. Peel, wash and cut the onion into squares.
  6. Heat vegetable oil in a frying pan. Over medium heat, stirring occasionally, sauté the onion until transparent (5-7 minutes).
  7. Basil (or tarragon), wash and chop.
  8. Transfer to a mortar, add 1 teaspoon of vinegar, grind. Transfer to a separate bowl.
  9. Crush the nuts separately in a mortar.
  10. Peel the garlic.
  11. Crush the garlic with a garlic press and add it to the nuts. Mix.
  12. Add red pepper. Crush all products until smooth. Dilute with wine vinegar (1 teaspoon).
  13. Classic lobio is cooked so that the water is completely absorbed during cooking. If it remains, you need to drain it.
  14. Put the boiled beans, without letting them cool down, into a bowl with fried or sautéed onions.
  15. Salt, stir and fry it for 3-4 minutes (let it absorb the heated oil).
  16. Transfer the mixture to an enamel or porcelain dish, add wine vinegar, crushed with basil or tarragon.
  17. Add dry pounded spices, for example, hops-suneli (by smell, you can replace the sweet clover). You can also add marigolds, coriander seeds, and cloves. Classic lobio must be prepared with coriander seeds. Also add seasoning. Mix all spices with lobio.
  18. Finely chop the greens.
  19. Add finely chopped spicy herbs. Mix.
  20. Traditional Georgian bean lobio is ready.
