Coconut Cookies with Dried Apricots

It is very simple to knead the dough with a mixer and lay it out with a spoon on a baking sheet. The result is such a cute coconut cookie with dried apricots.

Ingredients

  • Coconut flakes – 215 g
  • Dried apricots (finely chopped) – 135 g
  • Egg whites – 4 pcs.
  • Sugar – 200 g
  • Vanilla extract – 1 teaspoon
  • Flour – 75 g

How to make coconut cookies with dried apricots:

Directions

  1. Beat egg whites with sugar in a water bath, add vanilla extract, mix well.
  2. Remove the protein mass from the bath, add flour to the proteins, mix. Then add coconut and dried apricots, mix.
  3. Cover the bowl with cling film and refrigerate for 30 minutes.
  4. Turn on the oven to preheat to 170 degrees. Cover two baking sheets with parchment.
