Ingredients

  • 1 large red pepper (s)
  • 1 zucchini
  • 2 onions)
  • 2 cloves garlic, finely chopped
  • 150 g rice
  • 500 g minced meat, mixed
  • 1 can vegetables (Mexi vegetables)
  • salt and pepper
  • Paprika powder, noble sweet
  • Paprika powder, hot as rose
  • Garlic powder
  • possibly ketchup
  • curry
  • Oil for frying
  • 1 pinch (s) vegetable stock, instant

Instructions

  1. First peel the zucchini and cut into slices. Wash and dice the pepper. Cut the onions into rings. Peel the garlic and chop in to fine slithers.
  2. Sauté the whole thing in a little oil in a large pan over medium heat. Meanwhile, cook the rice in salted water according to the instructions on the packet.
  3. Next, heat some oil in a second pan and sear the minced meat. When roasting the meat, season with salt, pepper, paprika sweet and hot, garlic and curry (I always add a few drops of spiced ketchup, this gives the whole thing a special touch).
  4. As soon as the vegetables start to soften, add the minced meat with the stock from the pan. Stir in the cooked rice and the Mexican vegetables and fry briefly. At the end I sometimes sprinkle some vegetable stock over it as a spice, but it doesn`t have to be.
