  • Cottage cheese – 400 g
  • Eggs – 3 pcs.
  • Raisins – 50 g
  • Salt – 1 pinch
  • Vanillin – 1 pinch
  • Butter (for greasing the mold) – 20 g
  • Semolina (for sprinkling the mold) – 1 tbsp
  • Fresh mint (for decoration, optional) – 1 sprig

  1. Cottage cheese can be used both home and store. I have shop cottage cheese with a fat content of 5%.
  2. Break the eggs, separating the whites from the yolks. Send the whites to the beating bowl, add the yolks to the bowl to the curd. Add vanillin.
  3. Combine the curd with the yolks with a fork or, if the curd is dry and lumpy, with a blender.
  4. Add raisins to the bowl to the curd (you do not need to steam it beforehand, there is enough liquid in the curd).

  5. Add a pinch of salt to the egg whites and whisk them with a hand blender or mixer until crisp.
  6. Add the whipped egg whites to the curd and gently stir them into the mixture with a spoon.
  7. The curd mass acquires lightness and becomes more liquid.
  8. Grease the split form with a thin layer of butter and sprinkle with semolina.
  9. Put the curd mass into a mold and smooth the surface with the back of a spoon.
  10. Bake in an oven preheated to 180 degrees for about 30 minutes. The curd casserole rises a lot, but after you take it out of the oven, it will go down again.
  11. Transfer the slightly cooled casserole to a plate and garnish with fresh mint leaves.
  12. This curd casserole can be served with sour cream. Or with jam, jam, honey – everything will be delicious with such a healthy dessert!
