Ingredients
- 400 g pasta (mini farfalle) or other pasta
- 200 g ham, e.., Prosciutto Cotto, cut into strips
- 250 g mushrooms, cut into leaves
- 250 g asparaus, white or reen, cooked firm to the bite
- 2 cloves garlic
- 50 ml balsamic vinegar, white
- 50 ml olive oil
- 1 teaspoon sugar
- 1 teaspoon mustard (Dijon mustard)
- 1 teaspoon salt
- 1 bunch parsley, chopped
- 0.5 ½ bunch basil
- 200 g parmesan cheese
- 100 g pine nuts
- 1 tablespoon butter

- Cook pasta al dente. In the meantime, sweat the ham in a little butter and after 2 minutes add the mushrooms. Simmer for another 5 minutes, season with pepper and salt, add herbs as desired.
- Mix the pasta with the ham and mushrooms, put the vinegar, oil, mustard and sugar in a jar with a dash of water and shake well. Press the garlic into the dressing. Mix the asparagus carefully with the pasta. Add parsley and dressing and mix well.
- Roast the pine nuts in a pan until they have turned light and add to the salad. Slice plenty of Parmesan cheese over the salad, garnish with basil leaves.
