Crush the feta cheese, mix with the yogurt and lemon juice, mash well with a fork. Wash the cucumber, cut in half lengthways without peeling, scrape out the seeds with a teaspoon. Grate coarsely, place in a colander and squeeze out firmly with your fist.
Mix everything together, then stir in black pepper from the mill and a good dash of olive oil and chill. To serve, sprinkle with spring onion rolls and serve with strong bread in finger-sized pieces.
Since the flavor and taste come from the feta cheese, I do without salt and garlic in this variant.
