Fish Baked in the Oven with Vegetables, with Sauce

The most delicious fish is baked with vegetables and tomato-cream sauce.

Ingredients

  • Frozen fish (pollock, hake, cod, etc.) – 3 pcs. (700 g)
  • Bulb onions (large) – 2 pcs.
  • Carrots (large) – 2 pcs.
  • Flour – 1 tbsp
  • Dill greens – a few twigs
  • Sunflower oil – for frying (2-3 tablespoons)
  • Salt to taste
  • Ground black pepper – a pinch (to taste)
    For the sauce:
  • Tomato juice (or tomato puree from tomatoes) – 200 ml
  • Cream – 200 ml
  • Sugar – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Peel and wash onions. I cut the onions into four parts and then thinly cut the quarters.
  2. I peel and wash two large carrots. I rub them on a “Korean” grater.
  3. I clean the thawed fish, cut off the fins and tails. Then I cut the carcasses into pieces 2 cm thick.
  4. Fish such as pollock, hake, etc., which contain little fat, must first be fried before baking in the oven. I salt and pepper pieces of pollock, bread them in flour, and fry them in hot sunflower oil. I fry just a little – as soon as the breading on the fish is browned, I remove the fish from the pan.
  5. In the oil that the fish was fried, I sauté the chopped onion. I put the onion on a plate.
  6. After adding oil to the pan, lightly fry the carrots.
  7. I put the pieces of fish in a cast iron pan (you can use another dish suitable for baking in the oven), greased with sunflower oil. On top of the fish, I spread a mixture of onions and carrots, spread with a spoon. There should be a lot of vegetables so that they cover all the fish well.
  8. I pass several tomatoes through a juicer (you can use a meat grinder). (You can use tomato juice, canned peeled tomatoes in your own juice, etc.)
  9. Add cream, salt, sugar, black pepper to tomato juice, mix.
  10. Pour fish with vegetables with the resulting sauce, level the vegetables on top. Preheat the oven to 200 degrees, put the pan with fish in the oven for about 30 minutes.
  11. After 30 minutes, I take out the frying pan with fish from the oven, sprinkle finely chopped fresh dill on top.
  12. Fish baked with vegetables under tomato-cream sauce can be served.
