Forshmak with Cheese

There are many options for this herring appetizer – with an apple, with fried onions, baked forshmak. We suggest making a tender forshmak with cheese, the recipe will delight you with its simplicity.

Cook: 30 mins

Ingredients

  • Herring – 1 pc. (250 g fillet)
  • Butter – 100 g
  • Hard cheese – 150 g
  • White bread – 150 g
  • Milk – 150 ml
  • Mustard – 1-2 teaspoon (to taste)
  • Ground black pepper – to taste

Directions

  1. Break the bread into pieces and pour over the milk. Leave on for 20 minutes.
  2. Cut the herring into fillets. To do this, cut off the head and tail. Cut open the belly and gut the fish. Rinse the fish thoroughly under running water. Make an incision along the ridge and separate the fillets from the ridge. Remove all bones. Pry off the skin from the side of the tail and carefully remove.
    (If your herring is very salty, soak it for 1 hour in milk or water, and then rinse well.)
  3. Cut the herring fillet into large pieces.
  4. Grate cheese on a coarse grater.
  5. Grind the butter with a fork.
  6. Squeeze the bread out of the milk and place in a blender bowl.
  7. Add herring there.
  8. Grind until smooth.
    (If there is no blender, you can mince the herring with the bread 2-3 times.)
  9. Add butter, cheese freshly ground black pepper and mustard to the resulting mass.
  10. Mix well.
  11. Put the forshmak with cheese on a dish, make a wavy pattern on top with the edge of a spoon.
    Decorate the forshmak with fresh herbs and serve.
    If desired, forshmak can be served on toasted slices of bread.
    Forshmak can be covered with cling film and stored in the refrigerator for 48 hours.
