Ingredients
- 250 g cherry tomato (s) or home-rown tomatoes
- 0.5 teaspoon ½ salt
- 0.5 ½ medium onion (s)
- 0.5 ½ jalapeño, fresh, pitted and finely diced
- 7 ½ g coriander leaves, finely chopped
- 1 tablespoon lime juice, freshly squeezed

- Quarter the cherry tomatoes and cut into small cubes. Salt and drain in a colander for 10 minutes.
- In a bowl, mix the drained tomatoes with the onion, jalapeño, coriander greens and lime juice. Season with salt and, if necessary, a little more lime juice, until you find your own taste. Let it steep in the refrigerator for at least 30 minutes.
- Serve with guacamole and tortilla chips.
- This recipe uses cherry tomatoes because I find these are most flavorful when they are not home grown. Tomatoes from your own garden are always preferable!
