Ingredients

  • 2 chilli pepper (s), fresh, possibly 1 green and 1 red
  • 1 bunch spring onion (s)
  • 1 onion (s)
  • 3 ½ tablespoon olive oil
  • 1 small Can (s) tomato (s), chopped
  • salt and pepper
  • 1 pinch (s) sugar

Instructions

  1. Briefly blanch the chilli peppers in boiling water, cut them and the onions into very small cubes. Heat olive oil in a pan, add onions and chillies and simmer for 5 - 8 minutes over medium heat. Add tomatoes and simmer for another 15 minutes. Season to taste with salt, pepper and a pinch of sugar.
  2. The salsa tastes best when it has been through for a day.
