Ingredients

  • 150 g potato (s), floury, cooked
  • 2 egg (s)
  • 15 g parmesan, freshly rated
  • salt and pepper
  • nutmeg
  • some chives, chopped
  • some oil or clarified butter for frying
  • 1 slice (s) sausage (beer sausage) or meat loaf, approx. 80 - 00 g
  • some chives, chopped for garnish

Instructions

  1. Peel the potatoes and press them through the potato press. Add 1 egg, parmesan, chives, salt, pepper and nutmeg to the potatoes, knead everything well and season again to taste. Shape the mixture into a potato biscuit, a little larger than the sausage slice, and fry it for about 6 minutes on each side over the lowest heat in a non-stick pan. In the last 6 minutes, put the sausage slice in the pan and fry on both sides.
  2. In the last 6 minutes, brush a coated pan with oil and add the second egg to the cold pan. Now heat the pan, as soon as the egg begins to fry, you can switch the plate off again after a moment, the residual heat will set the egg white. If you want well-done egg yolks, you can also briefly fry the fried egg on the other side, it just doesn`t look so nice anymore.
  3. Now put the potato biscuits on a plate, then the fried sausage slice and then the fried egg on top. Garnish with chives rolls. You could eat a salad with it.
