  • Yeast-free puff pastry – 1 sheet (250 g)
  • Eggs – 4 pcs.
  • Tomato – 1 pc. (80 g)
  • Hard cheese – 100 g
  • Salt to taste
  • Ground black pepper – to taste

For the filling (optional):

  • Fresh parsley – 1 sprig

  1. Roll out the dough layer slightly with a rolling pin and cut into four parts. Transfer the dough to a baking sheet lined with baking paper. On each square of dough, step back from the edge of one centimeter and run the knife, without cutting through the dough, along all sides. Pin the middle with a fork.
  2. Bake in an oven preheated to 180 degrees for about 15 minutes. Without turning off the oven, remove the baking sheet with dough squares. On each square, draw a knife along the notches and lightly with the help of the middle to make “cups”.

  3. Grate the cheese on a fine grater and place in puff “cups”. Gently break an egg into each, being careful not to damage the yolk.
  4. Wash the tomato, cut into slices and arrange around the edge around the yolk. Season with salt and pepper. Place the baking sheet back in the oven and bake for about 10-15 minutes, until the eggs are cooked as desired.

  5. Decorate the prepared scrambled eggs on puff pastry with parsley leaves and serve.
