Fried Egplant Rings Stuffed with Tomatoes, Ham and Cheese

A very interesting option for cooking stuffed eggplants – the eggplants are cut into circles, from which the middle is cut out to make rings, put them in a pan, filled with filling and fried on both sides. An unusual not only method of stuffing, but also the filling is a mixture of tomatoes, eggplant pulp, ham and cheese. Tasty both hot and cold – a great snack, snack or even breakfast!

Ingredients

  • Eggplant – 400 g (1-1.5 pcs.)
  • Ham – 80 g
  • Hard cheese – 40 g
  • Tomato – 100 g (0.5-1 pcs.)
  • Egg – 1 pc.
  • Vegetable oil – 4 tbsp
  • Ground black pepper – to taste
  • Salt to taste

Directions

  1. Prepare food. Take large or medium-sized eggplants to make rings that are convenient for stuffing. The ham can be replaced with any ready-made meat (boiled, smoked, baked), sausage or sausages.
  2. Wash the eggplants, cut off the ends on both sides. Cut the eggplants into slices about 1 cm thick. I cut 14 slices using 1.5 eggplants. If the eggplants are large, one will be enough. Using a sharp vegetable knife or a teaspoon, cut the center out of the eggplant slices.
  3. Cut the ham into small cubes and place in a bowl.
  4. Peel the tomatoes, cut out the hard center, remove the seeds with liquid with a teaspoon. Cut the tomato pulp into small cubes and add to the ham.
  5. Grate the cheese and send it to a bowl too.
  6. Beat in an egg, add salt and black pepper. Salt, considering the salinity of the cheese.
  7. Mix.
  8. Cut the pulp of one eggplant into small cubes and add to the mixture of tomatoes, ham and cheese.
  9. Mix. The eggplant filling is ready.
  10. Heat 2 tablespoons in a non-stick skillet. tablespoons of vegetable oil and put the eggplant rings there.
  11. Fill the eggplant rings with the filling. Cover the skillet with a lid and fry the stuffed eggplant over medium heat for 5 minutes.
  12. Turn over and fry for another 3 minutes, covered. Put the finished eggplants on paper towels to remove excess oil. Fry the second batch of stuffed eggplants in the same way (I fried in two pans at the same time).
  13. Fried eggplant rings stuffed with tomatoes, ham and cheese are ready. Such a dish can be served as an appetizer on a festive table or as a snack. And even for breakfast, such stuffed eggplant rings will come in handy – in our family they have become an excellent alternative to the usual sandwiches with sausage and cheese. 🙂
  14. If desired, complement the stuffed eggplant with tomatoes, ham and cheese with sour cream, mayonnaise or garlic sauce.
