Fried Lagman (Kovurma Lagman)

One of the favorite dishes of my childhood is fried lagman or in Uzbek “kovurma lagman”. I want to share with you the recipe for this wonderful, very tasty, and satisfying dish.

Ingredients

  • For the test:
  • Flour – 500 g
  • Water – 180 ml
  • Egg – 1 pc.
  • Salt – 1 teaspoon

    For the sauce:

  • Lamb or beef – 500 g
  • Vegetable oil – 130 g
  • Onions – 500 g
  • Tomato paste – 100 g
  • Garlic – 30 g
  • Egg – 2-4 pcs.
  • Salt – 1 teaspoon
  • Ground black pepper – 1 teaspoon
  • Zira – 1 teaspoon
  • Dill greens
  • Parsley

How to cook fried lagman (kovurma lagman):

Directions

  1. First, let’s prepare the dough. Add one teaspoon of salt and one egg to 180 milliliters of warm water.
  2. Mix well and pour into 500 grams of flour. Knead at low speed into a tough dough. Such noodle dough can also be kneaded by hand. Leave the kneaded dough under a bowl for at least 30 minutes for proofing.
  3. After half an hour, roll out the dough into a layer 2 millimeters thick.
  4. Cut the noodles. The noodles can be sliced ​​with a noodle slicer or by hand.
  5. Put the finished noodles in salted boiling water and cook until tender. To prepare lagman according to this recipe, you can use ready-made pasta (noodles, spaghetti, pasta, etc.). Remove the boiled noodles from the heat, put them in a colander, rinse with cold water. Add 10 grams of vegetable oil to the noodles and mix.
  6. Now let’s prepare the sauce. Cut 500 grams of lamb or beef pulp into small cubes with a side of 0.5-1 centimeter.
  7. Cut 500 grams of onion into small cubes or thin half-rings.
  8. Cut 8 garlic cloves into small pieces.
  9. Pour 120 grams of vegetable oil into a cauldron or frying pan with a thick bottom, heat well, and fry the onion cut into half rings in it.
  10. Add the sliced ​​meat. Add one teaspoon of salt, one teaspoon of cumin, and one teaspoon of ground black pepper.
  11. Mix well and add 100 grams of tomato paste or 350 grams of finely chopped fresh tomatoes. Mix and add finely chopped garlic. Mix everything again and set it aside.
  12. Break one or two eggs into a bowl, add a pinch of salt, and beat well.
  13. Heat one or two teaspoons of oil in a frying pan and pour the beaten eggs into a thin layer. Fry on both sides.
  14. Cut the finished omelet into small pieces.
  15. Add half of the noodles to the omelet, fry, stirring.
  16. Add half of the sauce. Fry for 5-7 minutes, stirring all the time.
  17. Put the finished fried lagman on a dish, sprinkle with finely chopped parsley or dill and serve with fresh vegetables.
