Ingredients

  • 1 kg potato (s), waxy, e.g. Linda
  • 200 g pork belly
  • 2 onions)
  • 3 tablespoon fat, e.g. margarine or clarified butter etc.
  • 2 tablespoon cornstarch
  • Teaspoon pepper
  • Teaspoon rosemary
  • 0.5 teaspoon ½ caraway seeds, to taste
  • 1 teaspoon salt

Instructions

  1. Boil potatoes. It does not matter whether it is with no shell. You can prepare them well with the peel. Leftovers from boiled potatoes can be used without the peel. Let the cooked potatoes cool down, also overnight in the refrigerator.
  2. Now comes the trick for the crispness:
  3. Cut the potatoes into slices and sprinkle with the cornstarch in a sieve. Shake the sieve with the potato slices and the cornstarch over the sink so that the starch can wrap around the individual slices and separate them. (Starch is also the perfect separating agent when kneading dough such as shortcrust pastry and yeast dough).
  4. Dice the pork belly. Dice the onions.
  5. Let the fat get hot in a pan (I`ll use a coated one). Put the potato slices in the hot fat. Brown the potatoes over medium to high heat, moving little or not at all. Browning takes 5-10 minutes, depending on the heat.
  6. Now turn the potato slices in the pan with the spatula. The tanned side is now on top and the other side is tanned.
  7. Now place the bacon cubes on the slices. Do not stir in. After another 5-10 minutes, turn the discs again. Now add the onion cubes. Fry for another 3-5 minutes. Now season with rosemary, pepper and caraway seeds to taste.
  8. Now swivel the pan out of your wrist. Put the potatoes on the plates and only now season them with salt!
