Ingredients

  • 1 onion (s)
  • 1 clove garlic
  • 100 ml olive oil
  • 400 g tomato (s)
  • 450 g cucumber (s)
  • 2 red pepper (s)
  • 2 bell peppers, yellow
  • 1 bunch basil
  • 10 ml balsamic vinegar
  • salt and pepper
  • sugar

For the set:

  • Parmesan
  • Pesto

Instructions

  1. Peel the onion and clove of garlic and roughly cut into cubes. Put them in a saucepan with a little olive oil.
  2. Wash the tomatoes, remove the stalk, cut into small pieces. Peel the cucumber and cut into cubes. Wash and clean the peppers and cut into cubes.
  3. Put everything together in the pot. Add the rest of the oil + basil and mix finely. Season to taste with salt, pepper, sugar and balsamic vinegar.
  4. Pour through a sieve or strain with a liquor Lotte and season again to taste. Refrigerate.
  5. Serving:
  6. Pour the cold soup onto a plate or into a cup and garnish with a little pesto. Finally, pour some freshly grated parmesan over the soup.
