Ingredients

  • 2 medium egg yolks
  • 2 tablespoon lemon juice
  • 0.5 teaspoon ½ mustard
  • 125 ml rapeseed oil
  • 3 small gherkins (peppercornichons)
  • 1 large spring onion (s)
  • 1 tablespoon parsley, chopped
  • 2 teaspoons pepper, green, pickled
  • 1 pinch wort

Instructions

  1. Beat the egg yolk and lemon juice, salt and mustard as well as the seasoning in the blender. Let the oil at room temperature run in slowly.
  2. Cut the gherkins into small cubes. Clean, wash and finely dice the spring onions, stir into the mayonnaise with the parsley and green pepper, refrigerate until ready to serve.
