Ingredients

  • 300 g wheat flour
  • 20 g yeast, fresh OR:
  • 1 pack dry yeast
  • 75 g butter
  • 125 ml water
  • 1 teaspoon, leveled herbal salt
  • 1 pinch sage
  • 1 pinch basil
  • 1 pinch thyme
  • 6 peppercorns, green, finely chopped

For covering:

  • 1 ½ cup sour cream
  • 2 zucchini
  • 250 g mushrooms, white or brown
  • 4 pepper (s) from the glass
  • 20 olives, green
  • 2 piece (s) mozzarella OR:
  • 200 g cheese, rated (Emmentaler, Edam)
  • 1 teaspoon herbal salt
  • 1 pinch nutmeg
  • 1 pinch sage
  • 1 pinch thyme
  • 1 pinch marjoram
  • 1 pinch oregano
  • 1 pinch basil

Instructions

  1. Preparation for the ground:
  2. Heat the water in a tall cup and crumble the yeast into it, keep warm.
  3. Put the flour, the warm butter and the spices in a bowl, add the yeast and stir with a wooden spoon until everything has combined. Now knead the dough with your hands until it is nice and smooth. Let stand in a warm place for an hour, kneading several times.
  4. Preparation for the topping:
  5. Mix the sour cream with the salt and spices. Cut the zucchini and mushrooms into 1 cm thick slices, cut the peppers into rings.
  6. Roll out the dough on a greased baking sheet or two round pizza trays, brush with seasoned sour cream, top with zucchini, mushrooms, olives and the pepperoni rings.
  7. Bake the pizza at 200 degrees for 16 minutes, take it out of the oven and sprinkle with cheese, put it back in the oven and bake for another 14 minutes.
