  • 1 apple, (sour)
  • 100 ml white wine, (dry)
  • 4 herring fillet (s)
  • 4 tablespoon cranberry compote
  • 1 cup crème fraîche, (50g)
  • Pepper, freshly ground white

Instructions

  1. Peel the apple, cut out the core, cut the apple into 4 slices. Stew in wine until it is almost soft and let it cool in the liquid. Arrange the drained apple slices on a platter.
  2. Wash herring fillets, pat dry, roll up and place each upright on an apple slice, fill with cranberry compote.
  3. Mix the creme faiche with a little wine and apple liquid, season with pepper and pour over the fillets before serving.
