Ingredients

For the marinade:

  • 500 ml soy sauce
  • 100 ml Worcestershire sauce
  • 500 ml whiskey
  • 160 g cane suar, brown
  • 2 tablespoon Dijon mustard
  • 2 bulbs garlic (field garlic)
  • 2 tablespoon olive oil
  • Chilli, ground
  • Rosemary, chopped
  • Curry powder
  • coriander
  • oregano
  • sea-salt
  • Pepper, freshly ground
  • thyme

Also:

  • 0.5 liter ½ wine
  • 4 pinches cocoa powder
  • Sauce thickener, darker

Instructions

  1. Mix all ingredients for the marinade in sequence and season to taste. Soak the steaks and let them cool in a closed container for 2 days before eating.
  2. Remove the steaks and let them drain.
  3. Bring the rest of the marinade to the boil in a saucepan and pour in the wine. Add the cocoa powder and reduce for about 45 minutes. Thicken with a sauce thickener and allow to cool.
  4. The quantities given are sufficient for 4 beef steaks of 600 g each.
