Ingredients

  • 2.5 kg pork ribs
  • 1 onion
  • 3 cloves of garlic
  • 2 tbsp vegetable oil
  • 100 g tomato paste
  • 100 g sugar
  • 20 ml soy sauce
  • 3 tbsp honey
  • 1 tsp wine or apple vinegar
  • salt, paprika, pepper
  • 5 cm Ginger

Instructions

  1. Remove the membrane from the back of the ribs and cut into 2-4 pieces.
  2. Make the BBQ sauce: Heat the oil over medium-high heat. Finely chop the onion and garlic and fry for about 2 minutes until fragrant and beginning to brown. Add the tomato paste, sugar, soy sauce, honey, vinegar, grated ginger, salt, paprika, and pepper. Bring to a boil and simmer for 3 minutes until the sauce is thick and flavorful.
  3. Coat the ribs in the BBQ sauce, massaging well to ensure even coverage. Cover and refrigerate for 30 minutes.
  4. Preheat the oven to 220 °C (428 °F). Line a baking sheet with three layers of foil. Arrange the ribs in an even layer and cover completely with foil, sealing the edges.
  5. Bake the ribs covered for 1 hour at 220 °C (428 °F).
  6. Remove the foil and brush the ribs generously with the remaining sauce. Bake uncovered at 220 °C (428 °F) for 20 minutes.
  7. Turn the ribs over and brush with sauce, then bake for 20 minutes at 220 °C (428 °F). Repeat turning and brushing every 20 minutes, 3 more times, for a total of 80 minutes of uncovered baking.
  8. Reduce the oven to 180 °C (356 °F) and bake for 1 hour 30 minutes.
