Ingredients

  • 1 glass sour cherries (750 g)
  • 3 tablespoon sugar
  • 30 ml kirsch or cherry liqueur or similar
  • 1 tablespoon cornstarch
  • some water to mix the cornstarch

Instructions

  1. Strain the cherries and collect the juice. Caramelize the sugar in a saucepan until light brown. Deglaze the melted sugar with the alcohol and juice.
  2. Here it can happen that the sugar becomes solid again, as it cools down very quickly due to the cooler liquid. Simply heat the whole thing and let it simmer a little while stirring, then the sugar will dissolve again.
  3. Mix the cornstarch in a bowl with a little cold water until smooth and add to the fruit juice. Bring the whole thing to the boil so that the cornstarch binds. Finally add the cherries and simmer for a few more minutes.
  4. The hot cherries go perfectly with waffles, pancakes, ice cream or other desserts. In winter you can use amaretto to deglaze and / or use cinnamon to season.
