Ingredients

  • 500 g spelled, freshly round
  • 500 g wheat flour, 812
  • 18 g dry yeast
  • 35 g salt
  • 1 teaspoon sugar
  • 650 ml kefir, homemade room warmer
  • 200 ml water, lukewarm
  • 50 g flaxseed
  • 50 g sesame seeds
  • 50 g sunflower seeds
  • 50 g hemp seeds

Instructions

  1. Knead all ingredients well, except for the grains (food processor 10 - 15 min)
  2. Finally add the grains. Let rest for 30 minutes.
  3. Then shape the dough into 2 loaves and let rise for another 60 minutes.
  4. Bake at top and bottom heat 45. Heat the oven to 250 degrees and then reduce it to 200 degrees.
  5. Spray into the oven 3 times every 10 minutes with a water syringe. Finally, let off the steam.
