Ingredients

  • 500 g spelled flour
  • 250 g rye flour, type 1150
  • 250 g wheat flour, type 550
  • 3 packs dry yeast
  • 35 g salt
  • 1 teaspoon sugar
  • 700 ml kefir
  • 150 ml water
  • 80 g flaxseed
  • 80 g sesame seeds
  • 40 g sunflower seeds

Instructions

  1. Heat the kefir and water in the microwave for one minute at 800 watts. Mix the flour, grains, yeast, salt and sugar with a spoon, then add the kefir water and knead everything in the food processor for 10 minutes.
  2. Let rise until the volume has doubled. Then shape 2 balls and place in 2 proofing baskets. Let rise for another 45 minutes and then turn out onto a baking sheet. Bake at 200 ° C top / bottom heat for 45 minutes. To start, pour half a cup of water on the bottom of the oven and steam.
