Kuchen (German Pie)

An old recipe for a German pie, adapted to modern conditions. A kitchen pie is prepared from yeast dough; a distinctive feature of the pie is a sprinkling of butter crumbs.

Ingredients

  • Warm milk – 250 ml
  • Butter – 80 g
  • Egg – 1 pc.
  • Dry yeast – 15 g
  • Flour – 500 g
  • Sugar – 60 g
  • Salt – a pinch
  • Vegetable oil – 1 tbsp

For spreading:

  • Sour cream 20% – 100 g
  • Egg – 1 pc.
  • Sugar – 50 g
  • Soda – 0.5 teaspoon
  • Flour – 50 g

For streusel sprinkles:

  • Flour – 200 g
  • Butter, room temperature – 125 g
  • Sugar – 100 g

Directions

  1. To shorten the rise time of the yeast dough, start the dough. To do this, mix half the specified norm of milk with a spoonful of sugar and 3 tbsp of flour. Cover the bowl with foil and wrap with a towel.
  2. After 15 minutes, the dough will do.
  3. In a large bowl, combine the remaining dough ingredients, except flour, butter, and oil. Add dough and mix everything.
  4. Sift half the flour into the resulting mixture, add melted butter. After mixing, add the rest of the flour.
  5. Stir the dough with a spoon. To make it fit faster, grease it with vegetable oil, cover with foil and wrap with a towel.
    After about 20 minutes, knead the dough and let it rise again for 15 minutes.
  6. Place the dough on a floured table. Sprinkle flour on top of the cake – it is very tender and is not suitable for rolling.
  7. Cover the baking sheet with parchment, put the yeast dough in flour there and smooth it with your hands on the baking sheet.
  8. Prepare food for spreading.
  9. Combine all ingredients for spreading, adding flour last.
  10. Cover the dough with sour cream spread.
  11. Prepare food for streusel (sprinkling).
  12. Combine all the ingredients for the sprinkling.
  13. Rub with your fingers so that an oil crumb forms.
  14. Sprinkle the streusel sprinkle over the sour cream spread.
  15. Place a baking sheet with a pie in a slightly warm oven (50 degrees) for 15 minutes.
    Further increase the temperature to 190 degrees. Bake a German cuisine pie for 25 minutes.
  16. Soft base of the pie, covered with a thin layer of thick cream, which has turned into a sour cream spread, and crispy crumb.
