Ingredients

  • 1 kg wheat flour type 405
  • 800 ml water, lukewarm
  • 1 cube yeast
  • 2 teaspoons, heaped salt, approx. 8 g
  • 200 g wheat flour
  • 1 tablespoon, heaped bread spice mixture as desired, such as ground caraway, fennel, fenugreek seeds, etc., or leave out completely

Instructions

  1. Take a large bowl in which you can stir the dough together and in which the dough can also easily become at least twice as large.
  2. Dissolve the yeast well in lukewarm water. Mix 1 kg of flour with the salt, add the yeast water and mix in quickly. Since the dough is quite soft, please use a wooden spoon or dough mixer. This dough does NOT want to be kneaded for a long time, but rather mixed together.
  3. Cover the dough and let it rise in a warm place until it has at least doubled its volume. In summer this can be the case after 1 hour, in winter it can take up to 2 hours.
  4. During this rest period, remember to heat up your wood-burning oven or your fireclay brick in the oven. You should plan about 1 hour for this. (Heat the oven at the highest level for 1 hour with the fireclay brick - light the wood oven.)
  5. Line a proofing basket with parchment paper.
  6. When the dough has risen nicely, dust it with the 200 grams of flour and work it in with the dough scraper from the side of the bowl so that you can remove the dough, which is still quite soft.
  7. Put it in the baking basket and let it rest for another 10 minutes. Make sure that the side of the dough that goes into the basket is properly floured - otherwise the dough will stick hopelessly on later.
  8. When the wood-burning oven or the oven with a fireclay is up to temperature, turn the dough onto the bread peel and put it in the oven. Put the bread in the oven for about 1 hour.
  9. I would start the oven at maximum temperature and shut it down to 200 degrees after 15 minutes. I start the wood-burning oven at 300 degrees - the temperature drops automatically during the baking time.
  10. Regarding the bread spices: I like the bread completely pure, i.e. without any spices. However, you can change the taste super - from fried onions to herbs or nuts, but also the well-known bread spices, which can be added individually or as a mixture. Just try to find out your favorite.
