Ingredients

  • 400 g flour
  • 2 egg (s)
  • 240 ml buttermilk and water, half and half
  • salt and pepper
  • 2 tablespoons oil

Also:

  • 3 egg (s)
  • 100 g pork belly, cut into fine strips
  • 1 onion (s), roughly diced
  • 1 some oil
  • 1 tablespoon chives, finely chopped

Instructions

  1. Mix the flour with eggs, buttermilk and water, as well as salt and oil until smooth. Continue beating the dough vigorously until it becomes shiny.
  2. Bring salted water to a boil in a large saucepan. Use a spaetzle slicer to slice the dough directly into the boiling water. Skim off with a skimmer as soon as the spaetzle float to the surface of the water. Rinse in cold water and drain.
  3. Now fry the onion and pork belly in a little oil. Mix the eggs with the chives and salt and whisk. Prepare a scrambled egg in a little oil in a hot pan and stir the fried onions with the bacon into the egg. Now mix everything with the spaetzle.
  4. Arrange and sprinkle with a little parmesan cheese.
