Lazy Brizol

Delicious and bright breakfast – chicken pancake stuffed with mushrooms, cheese, herbs, pickled cucumbers, and garlic. A dish very similar to brizol, or lazy brizol, is an unusual serving of a regular chicken fillet.

Ingredients

  • Chicken fillet – 80 g
  • Champignons (medium) – 5 pcs.
  • Pickled cucumbers – 1-2 pcs.
  • Cheese (any hard or semi-hard) – 50 g
  • Eggs – 2 pcs.
  • Sour cream – 1 tbsp
  • Milk – 1 tbsp
  • Granular mustard – 1 teaspoon
  • Green onions – 1 feather
  • Fresh parsley – to taste
  • Garlic – 1 clove
  • Vegetable oil – for frying + 1 teaspoon.
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Put 80 g of chicken fillet, 2 eggs, 1 teaspoon of vegetable oil, 1 tablespoon of milk into the bowl of the blender, salt, and pepper to taste. Beat until smooth. The mass is very liquid.
  2. Finely chop five medium mushrooms. Fry mushrooms in vegetable oil to the degree you like. We put them in a bowl in which we will prepare the filling.
  3. Finely chop one small pickled cucumber (or two, if very small). We add them to the champignons.
  4. Chop a little green onion and a little parsley and put them in the same bowl.
  5. On a fine grater, rub 50 grams of cheese and one clove of garlic. Add to the filling. One clove will be enough because the filling will hardly be thermally processed – the garlic will sound very bright. Add one teaspoon of granular mustard to the filling.
  6. Heat vegetable oil in a frying pan. Stir the egg-chicken mixture a little so that everything that has settled to the bottom rises, and the mass becomes homogeneous again. Pour it into a preheated pan and cover it with a lid. (I have a frying pan with a diameter of 28 cm, its bottom is 20 cm in diameter.) We fry until the bottom is fried and the top turns white.
  7. After that, turn the chicken pancake over. It is better to do this with a large wide blade. If you turned it over successfully, then put the filling on one half of the pancake, and with the other half (by bending it) cover the filling on top. Cover the pan with a lid and fry until the underside is golden.
  8. Turn over and fry the remaining side until golden. If the pancake falls apart when you turn it over, do not get upset – this will not affect the taste. 🙂 Divide the pieces of pancake approximately in half and do the same: spread the filling on one half and cover with pieces of the second half of the pancake, fried side inward. Then we proceed according to the above scheme.
