Ingredients

  • 100 g almond (s), round
  • 100 g flaxseed, crushed
  • 4 tablespoon bran (wheat bran)
  • 2 tablespoon spelled flour, whole grain
  • 1 packet baking powder
  • 1 teaspoon salt
  • 300 g low-fat quark
  • 8 egg whites
  • 1 tablespoon bran (wheat bran)
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds

Instructions

  1. Mix together the almonds, flax seeds, 4 tablespoon wheat bran, flour, baking powder and salt. Add the quark and egg whites and mix to a smooth dough. Attention, the dough looks very runny for a bread, more like a sponge cake!
  2. Brush a loaf pan (10 x 30 cm) with water and sprinkle with 1 - 2 tablespoons of wheat bran. Line the bottom of the pan with parchment paper. The two steps are not necessary with a silicone mold, as nothing sticks here. Pour the batter into the loaf pan and sprinkle with pumpkin and sunflower seeds.
  3. Bake at 175 ° C (fan oven) on the middle rack for 50 minutes. Take out of the oven and let rest for 10 minutes, then turn over.
  4. Every now and then I add a few sunflower or pumpkin seeds to the batter or sprinkle it with flaxseed. There are no limits to creativity here.
