Ingredients
- 415 ml buttermilk, lukewarm
- 200 g spelled flour (whole rain)
- 150 g spelled flour
- 150 g rye flour (whole rain)
- 10 g salt
- 1 teaspoon sugar
- 0.5 ½ cube yeast, fresh
- 0.5 ½ pack sourdough (dry)
- 0.5 teaspoon ½ bread spice mix
- 1 tablespoon olive oil
- 2 tablespoon low-fat quark
- 1 teaspoon baking soda
- food starch

- Add the quark and olive oil to the lukewarm buttermilk, stir well and then pour this liquid into the container of the BBA. Mix the different types of flour with the salt, the bread spices, the baking soda and the dry sourdough. Pour the flour mixture onto the liquid and finally crumble the yeast over it.
- Set the BBA to the basic program (3 hours, level 2, dark).
- After the last kneading process, remove the hook to avoid larger holes. Then mix a little more cornstarch with water and brush the dough with it. If you want, you can sprinkle spelled meal or grains on the brushed bread.
- It took me many unsuccessful attempts and it took me mixing several recipes to come up with this recipe.
