Lviv Cottage Cheese Cheesecake

There are a lot of options for making Lviv cheesecake, because even at home, in the Ukrainian city of Lviv, it is prepared with lemon or orange zest, coconut, nuts, poppy seeds, and even apples. The obligatory ingredients for a cheesecake are eggs, fatty homemade cottage cheese, and high-quality butter. From above, the Lviv cheesecake is certainly poured with a thick layer of chocolate glaze.

Ingredients

  • Homemade cottage cheese (medium fat) – 1 kg
  • Sugar – 200 g
  • Eggs – 5 pcs.
  • Butter – 100 g
  • Potato starch – 2 tbsp
  • Lemon (zest) – 1/2 pc.
  • Raisins – 50 g
  • Basil or mint (for decoration) – 2 sprigs

For glaze:

  • Butter – 50 g
  • Sugar – 2 tbsp
  • Sour cream – 3 tbsp
  • Cocoa powder – 2 tbsp

Directions

  1. Prepare all ingredients. It is better to make homemade cottage cheese, it is more fatty and homogeneous than store-bought. The butter should be soft.
  2. Put cottage cheese and softened butter in a deep bowl. Use an immersion blender to grind the cottage cheese and butter until smooth. (If there is no blender, then the curd can be rubbed through a sieve and then mixed with butter.)
  3. Break the eggs, separate the whites from the yolks. Put the proteins in the refrigerator. Add the yolks to the curd and mix thoroughly again.
  4. Add sugar and starch to a bowl with dough, mix.
  5. Using a fine grater, remove the zest from the lemon (only the yellow part, since the white, is bitter). Add the zest to the curd mass. Put the raisins there. (Add nuts, orange peel, candied fruit, or dried fruit if desired.)
  6. Remove the egg whites from the refrigerator and beat with a blender whisk until firm white foam forms.
  7. Add the beaten egg whites to the curd, gently stirring in with a spoon or spatula. Stir from bottom to top to keep the air out of the dough.
  8. Preheat the oven to 180 degrees. Cover a rectangular baking dish with parchment and transfer the curd mass into it. The cheesecake will rise a little, so don’t repeat my mistake. Better to take the shape a little larger.
  9. Cook Lviv cheesecake in an oven preheated to 180 degrees for 60 minutes. Then remove the cheesecake mold from the oven and cool slightly before removing it from the mold.
  10. Flip the cheesecake onto the board and cool completely.
  11. For the icing, prepare the cocoa, sour cream, sugar, and butter.
    Instead of sour cream, you can take heavy (more than 20%) cream.
  12. Combine sour cream, sugar, butter, and cocoa in a saucepan. Put the saucepan on the fire and cook the frosting until the sugar is completely dissolved, without bringing it to a boil.
  13. Pour the Lviv cheesecake with the resulting chocolate icing and refrigerate for solidification, for about 1-2 hours.
  14. Garnish the Lviv cheesecake with fresh mint or basil leaves.
  15. The cheesecake turns out to be moist, sweet, aromatic, and very tasty. This dessert deservedly gained such popularity in western Ukraine.
  16. In the morning with aromatic coffee, a piece of Lviv cheesecake is just heaven on earth!
