Mackerel Rolls “Festive”

Oven-baked mackerel fillet rolls with vegetables are appetizing and tasty, I can’t even believe that it’s so simple and affordable! Can be served as a hot dish with a side dish or as a cold snack. The taste is simply magical, and cooking is a pleasure!

Servings: 2

Ingredients

  • Iced mackerel – 1 pc.
  • Carrots – 1 pc.
  • Bulb onions – 0.5 pcs.
  • Sweet pepper – 1/3 pcs.
  • Garlic – 1 clove
  • Vegetable oil – 25 ml
  • Salt to taste
  • Ground black pepper – to taste
  • Leaf salad (for serving)
  • Lemon (for serving)

Directions

  1. Grate the carrots, cut the onion into half rings, and dice the bell pepper. Fry vegetables and let cool. Add chopped garlic, salt and pepper.
  2. Rinse the fish, remove the bones, divide the mackerel into 2 fillets. Season with salt and pepper. Put some of the filling on the wide part of the fillet and roll the fish and vegetables into a roll, secure with a toothpick. Bake mackerel rolls in the oven for 30 minutes.
  3. Baked mackerel with vegetables can be served as a hot fish dish or as a cold snack with lemon and lettuce.
