Cut the zucchini into 0.5 cm thick slices. Brush the mushrooms lightly and remove the ends of the stems.
Cut the spring onions diagonally into pieces approx. 3 cm long. Leave garlic cloves whole, if you don`t want one, don`t take any. Remove the pepper cores and stem etc. and cut into bite-sized pieces.
Put the vegetables in a roaster, sprinkle with salt and sprinkle with about 3 tablespoons of olive oil criss-cross, then mix.
Put the roasting pan into the cold oven on the first level from the bottom and cook at 180 ° C for about 30 minutes (depending on how firm you want it to be). Mix occasionally during the cooking time.
I add a tablespoon of spice for roast lamb (available from the Turkish grocer), it gives it a wonderful taste and a bit of spiciness.
