Ingredients

  • 1 eggplant (s)
  • 4 tablespoon oil (fruity olive oil)
  • 1 teaspoon sugar, (barely)
  • 1 clove garlic
  • 3 tablespoon parsley, smooth, chopped
  • salt and pepper

Instructions

  1. Grill eggplant (possibly salted, washed, dried) in slices in the oven for about 20/25 minutes. Brush twice with olive oil.
  2. The longer it takes to brown, the better the sugar in the aubergine will caramelize ( I`ve read ).
  3. Then leave to marinate for a day in garlic, olive oil, parsley, salt and pepper (both sparingly).
  4. The aubergine slices can be a bit dry after grilling - this is done by marinating!
  5. Ideal on an Italian starter plate!
