Ingredients
- 200 g flour
- 120 g flour (whole wheat flour)
- 0.5 teaspoon ½ baking soda
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 0.5 teaspoon ½ clove (s), ground
- 0.5 teaspoon ½ nutmeg
- 100 g walnuts, chopped (or hazelnuts, almonds)
- 5 medium carrot (s), grated
- 1 egg (s)
- 100 ml oil (sunflower oil)
- 160 g suar, brown
- 375 g buttermilk
- 1 tablespoon lemon juice

- Mix flour with wholemeal flour (if you don`t have one in the house, then it only works with normal flour), baking powder, baking soda, nuts and spices.
- Beat the egg in a second bowl and mix with the sugar, buttermilk, oil, lemon juice and the carrots. Fold in the flour.
- Place paper liners in a muffin tin and pour in the batter.
- Bake in a preheated oven (fan oven 160 °) for approx. 20-25 minutes until brown.
- Decorate with icing or powdered sugar if necessary. Great with marzipan beets.
