Ingredients

  • 500 g minced meat, mixed, half pork / half beef
  • 4 tomato (s), dried, pickled in oil
  • 10 olives, pitted
  • 80 g mushrooms, can
  • 1 medium onion (s)
  • 1 roll (s), dry
  • 0.25 liter ΒΌ milk
  • 0.5 teaspoon Β½ oregano, dried
  • 1 egg (s)
  • 2 teaspoons mustard, medium hot
  • 2 cloves garlic)
  • 3 teaspoons capers
  • Black pepper
  • salt
  • Cayenne pepper
  • butter

Instructions

  1. Preheat the oven to 200 Β° top / bottom heat.
  2. Let the milk get lukewarm in a saucepan, cut the bread into slices, pour the lukewarm milk over it and let it soak.
  3. Peel the onion and garlic and cut into small cubes, cut the sun-dried tomatoes, olives and mushrooms into small cubes
  4. Squeeze the soaked bread roll well.
  5. Put the minced meat with the onions, garlic, tomatoes, olives, mushrooms, capers, oregano and the squeezed bread roll in a sufficiently large bowl, beat the egg over it, add the mustard, mix everything together.
  6. Season the minced mixture with salt, pepper and cayenne pepper. Shape the mince into a loaf and place in a buttered dish or casserole pan.
  7. Cook in the oven at 200 Β° for 1 1/2 hours.
  8. Possible variations:
  9. Instead of canned mushrooms, of course, fresh mushrooms or, in the noble version, maybe even porcini mushrooms or dried mushrooms (very aromatic) are conceivable. So with the mushrooms you can let your imagination run wild. To give the Mediterranean note even more support, artichokes might also be an ingredient. And then cover in the oven with Parma ham, pancetta or lardo.
  10. As a side dish, seasonal vegetables tossed in butter and potatoes or a potato and celery puree would be conceivable!
