Open Pastries with Cottage Cheese and Berries

Open pastries with cottage cheese and raspberries are a great combination of yeast dough, curd filling and sour berries.

Cook: 2 hours

Ingredients

For the dough:

  • Milk – 150 ml
  • Sugar – 3 tbsp
  • Instant dry yeast – 3 g (1 teaspoon)
  • Yolk – 1 pc.
  • Butter – 50 g
  • Wheat flour – 320 g (2 cups of 250 ml)
  • Salt – 1/3 teaspoon

For filling:

  • Cottage cheese – 200 g
  • Egg white – 1 pc.
  • Sugar – 3 tbsp
  • Raspberries (frozen) – to taste

To grease the pies:

  • Sour cream – 1 teaspoon
  • Milk – 2 teaspoon

For sprinkling the pies:

  • Powdered sugar – 1 tbsp

Directions

  1. Melt the butter and cool. We heat the milk to a temperature slightly higher than room temperature, about 37 degrees (you can use a cooking thermo).
    Pour milk into a deep bowl. Add sugar.
  2. Add fast-acting yeast. Stir the mixture lightly with a whisk.
  3. Pour in salt, pour in melted butter and add the yolk. Mix with a whisk.
  4. Gradually add the sifted flour and knead into a homogeneous elastic dough.
  5. Cover the dough with a suitable lid or place in a bowl and cover with cling film. Leave the dough to rise for about 1.5 hours. It should rise 2.5 times.
  6. We interrupt the cottage cheese in a blender or grind through a fine sieve.
  7. We transfer the curd to a bowl, add the egg white and sugar. Stir until smooth.
  8. We turn on the oven, heat it up to 200 degrees.
    Divide the matched dough into 10-12 parts. Roll each part of the dough into a ball and roll it into a cake.
  9. Put the curd filling in the middle of the cake and pinch the edges on both sides, leaving the middle open.
  10. We spread the open cottage cheese pies on a baking sheet.
    Mix sour cream with 2 teaspoons of milk and grease the pies with this mixture.
  11. Put the berries on top of the curd filling. I am using raspberries. Frozen berries must first be defrosted and put on a sieve to remove excess liquid.
  12. We put butter pies with cottage cheese in a preheated oven and bake at 200 degrees for 15 minutes.
  13. Sprinkle the finished cooled pies with cottage cheese on top with powdered sugar.
